Philippe Hauser is the new Director of Food and Beverage at the
recently rebranded Laguna
Beach Resort. His mission is to raise the quality of restaurant
and beverage service to compete or surpass Laguna Phuket's other
five star resorts. He has the background and enthusiasm to succeed.
"The Similan Grill at LBR is intimate and becoming a showplace
for Laguna Phuket.
I am introducing an improved menu and training to a higher level
of service for our valued guests," shares Philippe.
Preparing and serving quality menus is something he knows well
from experience. Philippe graduated at the top of his class from
culinary school after a three year apprenticeship.
He worked in London and then was recruited to work in some of the
top kitchens in Los Angeles. This included a three year stint at
The Grill in Beverly Hills where he prepared special dinners for
Hollywood stars as Jackie Gleason and Fred Astaire."
In America, I learned about healthier and lighter food and the
importance of spices and herbs. In the kitchen, there were opportunities
to learn about international cuisine," he continues.
"I like the creativity in the kitchen and the chance to present
variety and surprise for my guests."
After America, Philippe spent eight years in Australia where he
continued to learn and direct kitchen operations before moving into
food and beverage management. "I worked at the Sheraton Towers
in Surabaya for three years where I gained an appreciation of working
with Asians and their sense of balance in creating a menu,"
he comments.
At the Similan Grill, Philippe uses his international experience
to create cuisine that is perfect for his guests. His new menu will
introduce a range of Thai foods popular with Thai people, instead
of the standard dishes served to foreigners.
The Similan Grill features soft lighting and the gentle international
music of the Mandel Quartet. Philippe has trained his staff to deliver
service that is attentive but does not intrude on his guests.
It really is one of the most romantic destinations in Laguna Phuket.
